Why does stingless bee honey taste slightly tart?

Stingless bee honey is naturally a little tart — that is the signature of the stingless bee (the bee without a sting), not a sign that the honey has spoiled or been adulterated. The clean, tangy note comes from the organic acids the bees produce as the honey ripens inside the wax pots. Anyone used to ordinary honey will find it unusual at first; that is exactly how you recognise genuine stingless bee honey.

Stingless bee honey is also thinner than ordinary honey and rarely crystallises.

How to use

• Adults: 1–2 teaspoons a day, straight from the spoon or stirred into warm water below 40°C.
• Mix with lemon, ginger or tea; stir into yoghurt and cereal; use it in marinades.
• Never mix it into boiling water — high heat destroys the natural enzymes.
• Not for children under 12 months old.

Storage

• Keep in a dry, cool place, out of direct sunlight.
• No refrigeration needed. Close the lid tightly after every use.
• Use a clean, dry spoon; any water that gets in will spoil the honey quickly.
